The Wüsthof Gourmet 20 cm chef's knife is similar to the "regular" Wüsthof Classic chef's knife. The main difference between these two knives is the grind. While the "regular" knife has a blade ending with a wider part resembling a guard, this model has a grind along the entire length, allowing you to use the entire blade. Additionally, you can easily sharpen the knife because you don't encounter a bolster at the heel of the blade. The blade is made of stainless steel with vanadium and molybdenum content. The handle made of polypropylene is attached to the blade with three rivets.
