Introducing the Japanese Santoku knife DELLINGER SUNCRAT SENZO Classic Damascus SZ-04, designed for all-purpose kitchen tasks. The term Santoku means "three virtues," highlighting its proficiency in slicing, dicing, and chopping meat, fruits, vegetables, and fish. This series of knives is slightly heavier than typical Japanese knives, thanks to the cold blade forging process. The initial thickness of the blade blank before forging is 4 mm. This technique, known as Tsuchime (hammered surface), not only enhances the knife's aesthetic appeal but also minimizes food sticking to the blade. The knife boasts an ultra-sharp cutting core crafted from Japanese VG10 steel, with a hardness of HRC60-61. It is encased on both sides by 16 layers of softer Damascus steel, featuring a Tsuchime finish. This construction provides outstanding strength, durability, and resilience. A thin, red, heat-resistant spacer separates the blade from the handle, allowing both the steel and wood to expand and contract safely under extreme conditions. The handle is constructed from Pakkawood, a material that mimics ebony wood. Pakkawood is highly resistant to water and moisture and is completely odorless. It ensures that the handle will not corrode, oxidize, or become soft and brittle over time. Unlike traditional wood, Pakkawood requires virtually no maintenance.
