The Japanese utility knife DELLINGER SUNCRAT SENZO Classic Damascus SZ-02 is an excellent alternative to a larger chef's knife when precision is key, such as when slicing green beans or other smaller vegetables and fruits. It's also ideal for skewering and slicing meats. Knives from this series are slightly heavier than typical Japanese knives. This added weight comes from the cold forging of the blade. The standard thickness of the semi-finished product before pressing is 4 mm. This process, known as Tsuchime (hammered surface), not only enhances the knife's aesthetic appeal but also prevents food from sticking to the blade. It features an ultra-sharp cutting core crafted from Japanese VG10 steel, with a hardness of HRC60-61, encased on each side by 16 layers of soft Damascus steel with a Tsuchime finish. This construction ensures exceptional strength, durability, and resilience. The knife blade is separated from the handle by a thin, red, heat-resistant ring, allowing the steel and wood to expand and contract safely, even under extreme conditions.The handle is made from Pakkawood material, which mimics ebony wood. Pakkawood is highly resistant to water and moisture and is completely odorless. You can trust that this material will not corrode, oxidize, or become softer and more brittle over time. Unlike traditional wood, this material requires virtually no maintenance. Never wash the knife in the dishwasher.Avoid using the knife as a crowbar and do not bend it. Refrain from using the knife to cut hard and frozen foods. Protect the knife and its blade from falls or impacts.
